Zucchini with minced beef in just 15 minutes

This express recipe of zucchini with minced beef is an easy alternative to “dolma” (stuffed zucchini), and it saves the whole process of hollowing the vegetables out and then stuffing them. In this way we can have a quick dish which is still excellent. And even more, since it’s also without rice, it makes a good option for those who follow a low-carb or keto diet.

Ingredients:

3-4 small zucchini, preferably the light green ones

250 gr of ground meat.

1 large tomato or 200 gr of passata de pomodoro

1 tablespoon tomato paste (optional)

1 large onion

1-2 cloves of garlic

Salt, pepper, extra virgin olive oil

Some dill

Heat a little olive oil in a nonstick skillet. Chop the onion and brown it over low/moderate heat. Chop and add the garlic and after a few minutes the ground meat. Raise the heat a little, add salt and pepper and mix so that it browns completely. At that point, add the zucchini cut into not very thick slices. Finally add the crushed and peeled tomato and continue cooking for about 10 more minutes. Serve with fresh dill on top.

Tips and tricks:

  1. The best result in this recipe is obtained when using the pale green type of courgettes (also called Genovese or white zucchini), which are also used to prepare dolma. But of course it is possible to use any type of courgette or zucchini. It’s also advisable to choose the smaller ones, which are more tender.
  2. It’s possible to serve this dish with a little chopped parsley on top. But the dill really gives it a great fresh twist and pairs wonderfully with the zucchini.
  3. Use beef, lamb, or a mix of both and ideally, with low fat content. Ground meat with more fat should be used for grilled hamburgers.
