The pears in red wine are a tasty and elegant dessert that elevates the category of any menu. Its preparation is very simple and in any of its different variants, it always manages to impress all diners.
Ingredients:
1 pear per person
Red wine (enough to cover the pears during cooking)
1 cinnamon stick
1 teaspoon of sugar for each pear (or alternatively xylitol)
Optionally:
A bit of orange and/or lemon peel
1-2 units of star anise
Some cloves
2 cardamom beans
Use pears which are ripe, but still have a firm consistency. Peel and cut them in half. Depending on the desired presentation, it’s also possible to de-core them, but the dessert will look more elegant if we keep the two whole halves together. Also, if we want to serve them vertically, make a cut in the lower part so that they can be kept in that position.
Place them in a saucepan together with the spices, add the sugar to taste and cover them with red wine. Boil on low heat for about 20 minutes. During cooking, take care that they are fully soaked in the wine, so that they can be colored evenly.
Remove the pears, set aside, and continue to reduce the wine sauce for an additional 10-15 minutes.
Tips and tricks:
- Pears in red wine are delicious both hot and cold, but they can even be served with a very interesting temperature contrast, that is, cold pears with the mulled wine sauce on top.
- Another excellent option is to serve them accompanied by a spoonful of mascarpone or a scoop of vanilla ice cream.
