“Köfte” are very famous Turkish meatballs. The secret of its flavor and consistency is not only in the spices or seasonings, but also in the fact that the meat is ground again. Thus, a perfect texture is achieved, without the need to add breadcrumbs or eggs.
Ingredients:
½ kg of minced meat
1 red onion
1 bunch of parsley
Salt, pepper, cumin
Chop roughly the onion and parsley, blend them in a food processor and gradually add the meat, so as not to saturate the motor. When a homogeneous paste has formed, add a teaspoon of salt, one of ground black pepper and one of cumin. Mix to integrate.
Form small balls with the palm of your hand with. Heat a non-stick pan or grill and cook the “köfte” for a couple of minutes on each side. Serve immediately.
Tips and tricks:
- It is possible to use beef, lamb or a mixture of both.
- If the meat used is very lean, a tablespoon of extra virgin olive oil can be added to the mixture.
