Grilled razor clams

Razor clams (also called sword razors) are delicious seafood and this is the easiest and most practical way to prepare them. You just have to be careful to clean them in the way indicated here. Have a glass of good white wine handy and take note of the recipe!

Ingredients:

A bunch of fresh razors clams

Extra virgin olive oil

Optionally:

Garlic, parsley and lemon

The important detail to prepare delicious razor clams is cleaning them beforehand, since, like clams, these shellfish tend to carry sand residues. Skipping this previous step would mean finding ourselves later chewing dirt that would ruin the bite.

To do this, place the razors in a bowl and submerge them for at least two hours in salted water. Store in the fridge and change the water after an hour.

After having filtered the possible impurities in this way, we can proceed to the cooking:

Heat a pan with a little bit of extra virgin olive oil. Arrange the razors one next to the other and cook until they open. Two minutes should be enough for it. Ready!

Tips and tricks:

  1. The razor clams are very good served immediately without further accompaniment. We can add the juice they release while cooking, or a little lemon juice.
  2. Another excellent accompaniment is a little chopped garlic and parsley on top of each razor. In this case, I recommend preparing it before cooking the razor clams, so we can enjoy them right when they’re ready.
  3. If you want to accompany the razor clams with a glass of a good white wine, I suggest a Ribeiro or Albariño.
