Chorizo ​​in red wine recipe

Although I don’t have a special predilection for sausages, I have to admit that this recipe is exceptional in its simplicity. This chorizo in red wine is an absolute delightful Spanish “tapa” which is done in no more than half an hour, and very easy to prepare. Don’t forget to have some good bread on hand to enjoy!

Ingredients:

Some Spanish chorizos (spicy if you prefer)

Red wine (enough to cover them during cooking, approx. 1 dl for each chorizo)

Optionally:

1 onion

1 tablespoon tomato paste

Extra virgin olive oil

A loaf of bread to accompany when serving

Remove the peel from the chorizo ​​and cut it into 3 or 4 parts.

As an optional previous step, boil it for at least 5 minutes, in order to get rid of part of the fat.

In a small saucepan, heat a little olive oil. Finely chop the onion and brown it over moderate heat. When it has become transparent, add the tomato paste, mix and deglaze with the wine. Add the chorizos, bring to a boil and then cook over low heat for 25-30 minutes.

Serve the chorizo in red wine immediately, always with some bread on the side!

Tips and tricks:

  1. For an express version, simply boil the chorizo ​​pieces in red wine for half an hour.
  2. Both the initial stir-fry and the addition of tomato paste are optional, but they add flavor, as well as allowing the sauce to bind and thicken.
  3. The chorizos provide more than enough amount of salt. On the other hand, many people usually add a teaspoon of sugar when cooking with wine, but I don’t think this is necessary when using a good quality one or when adding a stir-fry with onion and tomato paste.
  4. Use a good table wine, the same that would also drink. Of course you won’t use the best one of your cellar, just keep in mind that a simple recipe like this is always based on good quality ingredients.
