This vegan recipe is a delicious variant of the traditional fainá, which is served in all pizzerias of Buenos Aires. The green onions (or scallions) adds a lot of flavor and personality to the preparation, which is why it is worth making it at home, since it also involves very little difficulty.
Ingredients:
200 g chickpea flour
500 ml of water
3 not very large green onions
1 teaspoon of salt
Extra virgin olive oil
Start by sifting the chickpea flour into a bowl, add the salt and mix. Gradually add the water while whisking simultaneously. Continue until the flour has completely dissolved and there are no lumps in the mixture. Cover the bowl with kitchen film and let it rest for at least an hour.
After that period, preheat the oven to 200 degrees. Discard the top green part of the scallion and chop the rest. Briefly beat the chickpea flour and water mixture, since after standing the solids will have settled to the bottom. Add the chopped green onion to the preparation and stir.
When the oven is hot, add extra virgin olive oil to a metal mold about 28 cm in diameter. Heat for just two minutes in the oven, simply until we can move the form and allow the oil to spread easily over its entire surface. Then add the fainá mixture, return it to the oven and cook for about 35-40 minutes, until we see that the top has a golden color.
The fainá with green onion can be enjoyed either cold or warm, but to my taste, it is unbeatable straight out from the oven.
