This easy banana bread is a good example of how to replace processed food with a delicious recipe for a healthy breakfast or snack, in which we can combine sweet banana with healthy carbohydrates, by using wholegrain flour.
Ingredients:
100 gr of flour (of the type you prefer)
100 ml of whole milk or plain yogurt
2 eggs
2 ripe bananas
Some walnuts to decorate
1 tablespoon coconut or extra virgin olive oil
1 teaspoon of baking powder and a pinch of salt
1 teaspoon of cinnamon, half of nutmeg, a quarter of dried ginger
Preheat the oven to 180 degrees. Mash the bananas in a bowl and mix with the milk (or yogurt). Add the eggs and beat. Then add the flour little by little through a sieve, to prevent lumps from forming, add the spices, the baking powder, the oil and a pinch of salt. Mix with a spoon until the mixture looks homogeneous.
Cover a form with a bit of flour or butter (skip this step when using a silicone one) and pour the mixture in it. Decorate with some walnuts on top. Bake for about 35-40 minutes (the exact time varies according to each oven). To check if the banana bread is ready, prick it with a toothpick, which should come out clean.
Tips and tricks:
- The proportion of main ingredients is 100 grams of each. I always insist that the quantities are always relative and that they depend on taste and the “eye”, but this is more delicate when it comes to baking. To prepare more quantities, the ingredients can be increased in that proportion (150 gr of flour / 150 ml of milk / 3 eggs, etc).
- I like to stick to the indicated spice proportions so that cinnamon takes center stage. Also, nutmeg, and especially ginger, can be too dominating when used in excess.
- I really like to use buckwheat flour for this recipe, but spelt or oat works great too.
- This recipe is not only useful for those bananas that turn dark and nobody wants to eat them. It even turns better with them, since their content of natural sugars is higher. This secret allows us to bake without added sugars.
- If the result is not sweet enough for you, it’s always possible to serve with some honey.
- Banana bread is normally baked in a rectangular shaped form as a loaf. But it’s of course possible to use the same mixture in muffins or cake forms. Just keep in mind that smaller shapes will require slightly less baking time.
